When my son turned eight last year, he wanted to do something different than the normal birthday cake I either bake or order for the kids’ birthdays. Anyone who has made themselves a normal fixture in my social media “life” knows that we are – as a family – a huge fan of brownies! Tre decided he wanted to have a brownie cake for his birthday rather than the traditional cake-and-icing… so I incorporated three things that we all love – brownies, marshmallows, and FOOTBALL!!!

To make his birthday cake, I used:

  • One box of family sized Betty Crocker® Triple Chunk brownie mix
  • One jar of Kraft Jet-Puffed Marshmallow Creme
  • One can of Betty Crocker Easy Flow chocolate decorator icing

INSTRUCTIONS

  1. Bake the brownies in a 9×13 cake pan according to the instructions on the box (ADD an extra egg to give the brownies more of a cake-like consistency)
  2. Let the brownies cool for about 25 minutes.
  3. Mix the marshmallow creme with a small amount of warm water (about a tablespoon) and whip it until it is easily spreadable
  4. Top the brownies with the marshmallows and decorate with icing. I used chocolate – since my cake “theme” was football, I needed brown.

I’m not very experienced with cake decorating so mine didn’t turn out exquisite-looking but it was nothing short of delicious in every sense of the word. It was such a HUGE hit, my daughter wants me to bake her one for her party when she turns 10 next weekend :)
