This is from last week’s meal plan… my own recipe :) Sorry to be posting this so late!! I kept trying to get around to it, and time just never permitted. :) I do hope you will forgive me! haha

Chicken quesadillas

The ingredients I used for this dish are:

- Tyson fresh chicken breast strips
- Hormel Chili Master’s white chicken chili
- Shredded cheese
- Flour tortillas
- McCormick’s chicken taco seasoning
- Seasoning salt
- Cooking spray (canola oil)

Wash the chicken well… sprinkle it with seasoning salt on one side and chicken taco seasoning on the other then pan fry it with cooking spray, shredding it with a fork as it cooks. Once the chicken is thoroughly cooked, pour in about half a jar of white chicken chili and mix it together.

Spray the bottom of a skillet with cooking spray and place one flour tortilla inside with the stove on medium or medium low. Put a thin layer of shredded cheese on top, then spoon the chicken/chili mixture on top, flattening it with the bottom of the spoon.

Cover it with a thin layer of shredded cheese then top it with another flour tortilla. When the bottom tortilla is slightly browned (it doesn’t take long!!), spray the top tortilla lightly with cooking spray then flip it over to cook until it is also slightly browned. The cheese inside should be melted. That’s it!

I use a pizza cutter to cut it into pieces :) Repeat the steps until you’ve made as many quesadillas as you need! I served this with a side of nachos and cheese… the family LOVED it. {My husband said it tasted exactly the same as Taco Bell’s!}
