This was a rather experimental dish. It was simple, quick, and I must say DELICIOUS. I used the following:
- Tyson boneless chicken breast fillets
- 2 packages of Uncle Ben’s Ready Rice {Long Grain & Wild}
- Seasoning Salt
- McCormick chicken taco seasoning mix
I cooked the two packages of wild rice in the microwave for 90 seconds as instructed on the label. I set them aside while the chicken baked. {I’ve never had Uncle Ben’s Ready Rice, so I was a little skeptical as to how great rice could possibly be in 90 seconds. Holy SMOKES, was I surprised. It was GREAT!}
As for the chicken, I preheated the oven to 350 while I washed it and put it in a baking dish, letting the excess water remain in the pan for moisture as it cooked. I sprinkled one side with seasoning salt and the other side with McCormick chicken taco seasoning mix (not the whole pack – just enough to lightly coat one side of the chicken). I covered the baking dish with aluminum foil and put it in the oven for about 20 minutes.
I emptied both packages of rice onto the chicken and turned each piece over, laying it on top of the rice, then placed it back in the oven for about another 5 minutes.
That’s it. :) It was REALLLLLLY good. My whole family ate every bite… my son even commented on how great this dish tasted, and he’s my pickiest eater! The chicken was extremely moist and flavorful and the rice was perfect – putting them together created a simple, quick, yet very tasty meal!!













I love Uncle Ben’s Ready Rice. I was skeptical like you, but I’ll never go back to cooking rice the old way if I can help it!
